Abstract

SEASONAL VARIATION IN NUTRITIONAL COMPOSITION AND QUALITY OF TWO EURASIAN CATFISH OF THE OLD BRAHMAPUTRA RIVER IN MYMENSINGH DISTRICT OF BANGLADESH

Abstract

Seasonal variation in nutritional composition, freshness (sensory quality), quality of two Eurasian Catfish (Ompok pabda and Wallago attu) of the Old Brahmaputra river in Mymensingh district of Bangladesh was studied. In doing so two Eurasian Cat fish (Ompok pabda and Wallago attu) were selected for this research. Nutritional composition e.g. Protein, Lipid, Ash and Moisture; freshness (sensory quality) in terms of SDP value, Quality e.g. TVB-N value and TMA-N value was studied in Winter, Summer and Autumn season. Result of this research experiment indicated that nutritional composition significantly varies among the seasons with a few exceptions e.g. in Wallago attu protein content remained nearly same (16.1–16.4%) throughout the research period. Highest lipid content (4.4%) was estimated in Autumn season in Ompok pabda, but highest lipid content (2.4%) was estimated in Winter season in Wallago attu. In both species highest ash content (4.9% in Ompok pabda, 7.4% in Wallago attu) was estimated in Summer season but ash content was significantly different in different seasons of the year. Moisture percentage was also significantly different in different seasons in both the species. Freshness (sensory quality) in terms of SDP value was also significantly different in various seasons but remained in excellent (SDP < 2) condition except Wallago attu in Autumn season. Quality in terms of TVB-N value and TMA-N value was also significantly different in various seasons in the Eurasian Catfishes of the present research but TVB-N value and TMA-N value remained within the Maximum Allowable Limit as recommended for chilled fish (TVB-N value <30 mg/100g; and TMA-N value <8-10 mg/100g).
