COMPARATIVE STUDY OF COW MILK QUALITY COLLECTED FROM DIFFERENT AREAS

Abstract
The present study was assessing the milk quality and will provide information regarding hygienic keeping of the milk.Four private dairies keeping cows were selected at Bhilwara, Rajasthan marked as dairy 1, 2, 3 and 4. The milk of four different dairies was analyzed compositionally for the SNF, Fat&Lactoseparameters. The milk samples from all the four areas differed significantly from each other in fat, lactose and SNF. Contents of total solids, fat and lactose in the milk ranged from 7.90-10.11%, 2.48-5.34% and 3.58-5.28%, respectively on an average. The sample from dairy 2 was found to be most appropriate and sample from dairy 4 was found to be least appropriate.
