. Abstract Effect of solvent, temperature, pH and time on extraction process of anti-thiamine factor present in Amaranthus spinsus leaves was studied. Results showed that extraction of the leaf-extract with methanol at 50º C for 15 minutes at pH 3.0 had maximum anti-thiamine activity in in vitro experiments.
