. Abstract Small-seeded grains called millet have been grown and eaten all across the world for generations. It is well-known for its toughness, versatility in growing environments, and high nutritional value. Millets are a good source of dietary fibre, protein, and minerals like calcium, iron, and zinc. Unfortunately, despite their nutritional advantages, millets are frequently disregarded and underutilised because of a lack of awareness, poor processing methods, and few value addition.
