ASSESMENT AND BIOCHEMICAL ANALYSIS OF BLACK SOYBEAN (WITH AND WITHOUT SEED COAT)

Abstract
Proximate properties of black soybean (with and without seed coat) such as protein, carbohydrate, crude fiber and oil content were determined. The values of protein, carbohydrate and oil content in black soybean with seed coat are 30.0g/100g, 31.85g/100g and 16.2 g/100g respectively. The amount of protein, carbohydrate and oil content in black soybean without seed coat are 29.55 g/100g, 30.35g/100g and 15.9 g/100gm respectively. The percentage of crude fiber in black soybean with and without seed coat is 7.51% and 4.12%. The protein, carbohydrate, crude fiber and oil content were more in black soybean with seed coat than without seed coat. The crude fiber in black soybean was highest in seed coat compared to without seed coat.
